Is it possible to duplicate the “Default Layout” so I can then edit it and have two forms which look much the same (I’d like to move a couple of fields around and hide a couple more).
BTW, is it just me or is the captcha to get here a PITA?

Sorry for the Captcha thing. It’s just Google’s Captcha thingy. Helps to eliminate spam (for the most part) from the forum.
For the benefit of others I’m going to copy and paste the email that I just sent you in response to this question.
The Default Layout isn’t like the custom layouts at all. It is a completely separate bunch of code to generate that.
But what you can do is create a custom layout, then select all the fields on the right side layout inspector panel and drag them all over to the left into the layout designer area. If you have the “Create a Label” checkbox turned on, you’ll get something that’s similar to the Default Layout in terms of label on the left and field on the right and one field above the next.
