Is it possible to import an exported CSV File to a blank Form (name only, no defined fields yet) in such a way that it creates the field names and values from the CSV File OR do you have to define all the fields first in my new TapForms database beforehand?

Yes, it is possible. Just click on the ‘Add missing fields to form’ checkbox.
I just ran into this on iOS that there isn’t an “add missing fields to form” option on iOS but there is one on Mac. Which platform are you using?
I’ve added the Add missing fields to form
setting for the next iOS update.
The best way to do this is to import. Review the customize form and fields. Set the field types to what they should be. Delete all the records and import again.
Do this until your field types are all correct.
Then if you have more of the same type of records to import it will go without a hitch as long as the import file has the same fields names as original.
You can also put the field types in the field titles row.
For example:
Movie Title<text>,Revenue<number>,Rating<rating>
You should put that field type hint in your documentation somewhere, I don’t think I’ve seen it on any of the passes I’ve done.
