I made an error when I first entered one of the options for a pick list and didn’t notice it until after I’d used it on a bunch of data. I edited the pick list to fix the typo, but the edit won’t stick. All my entries still have the misspelled word, and the pick list option on the popup in the form is still spelled wrong.
The entry is correct in the “Edit Pick List” screen.
I found a workaround: quitting and starting the app again updates the entries in the pick list popup, though it’s still spelled wrong in all the places it was applied originally.

But the issue with the value being the same as it was when you first picked it, that’s by design. Tap Forms simply copies the value from the Pick List to the text field you’ve set the Pick List on. It doesn’t store it as a reference, but simply a copy of the value. What you could do is fix one of them, switch to the multi-column list view, then drag the yellow grab handle on the cell with the correct value downwards to copy that value to the other records.
